Ingredients:
(1 serving)
1/2 zucchini, ribboned
2 tsp capers
Fresh basil, finely chopped
1/2 shallot, finely diced
1/2 lemon, juiced
2 tbsp extra virgin olive oil
Salt + pepper
2 tbsp tahini dip (or hummus)
2 slices of wholegrain sourdough
Method:
Mix the capers, basil, shallots, lemon juice, and olive oil in a medium-sized bowl. Season with salt and pepper
Ribbon the zucchini using a hand-held peeler and toss into the dressing until well combined
Spread some tahini dip on toast and top with the zucchini
