Three Ingredient Pancakes

This is one of my all time favourite breakfast recipes. Anyone who knows me has probably tried these multiple times. They're also a camping favourite!


Ingredients

2 mashed overripe bananas

3 eggs

1/2 tsp cinnamon


Toppings:

2 tbsp Greek yoghurt

Drizzle of honey

Fresh blueberries

Hemp seeds


Method

1. Mash the bananas in a bowl and mix in the eggs and cinnamon until a smooth batter is formed.

2. Spoon the mixture onto non-stick pan on medium heat.

3. Cook for 1-2min on each side or until golden.

4. Top with Greek yoghurt, hemp seeds, your choice of fruit and a drizzle of honey.
